YUM!: Ready for Lunch


Hello and welcome to final post on YUM!. Here, I will be talking about different types of sandwiches from around the world. Sandwiches have always been one of my favorite lunches and it’s interesting to see that sandwiches can be found in different many cuisines. I’m going to start by making the classic BLAT: bacon, lettuce, avocado, and tomato sandwich! The second sandwich I will teach you how to make is Banh Mi, which comes from Vietnam and has a French baguette, grilled meat, and pickled daikon and carrots. The third one will be a Smørrebrød, an open-faced sandwich that originates from Denmark. And the final sandwich I will make is called a Medianoche, which is Cuban staple, made with pork, pickles, and cheese.

The BLAT

My BLAT

Ingredients

  • 2 slices of bacon
  • 1 avocado
  • 2 tablespoons of basil
  • 1 tablespoon of mayonnaise
  • ½ teaspoon of minced garlic
  • ¼ teaspoon of salt
  • ¼ teaspoon of ground pepper
  • 2 slices of bread
  • 1/2 medium tomato (3 slices)
  • 1 romaine lettuce leaf

Recipe

  • Cook the bacon over medium-high heat until it is crispy. Next, remove bacon from the heat and put it on a plate with a paper towel on it.
  • Put the avocado in a food processor and mix until smooth. Then, add the basil, mayonnaise, minced garlic, salt, and pepper and mix until combined.
  • Cut tomato into slices and wash the lettuce.
  • Get 2 slices of bread. Then spread the avocado mixture on it. Next put the lettuce, tomato, and bacon on it. Finally, put the other slice of bread on top.
  • Optional: Put the sandwich in a panini press and cook until golden brown!

Smoked Salmon Smørrebrød

My Smoked Salmon Smørrebrød

Ingredients

  • ½ cup of sour cream
  • 1 tablespoon of grated horseradish. (I used horseradish cream which works too.)
  • 1 teaspoon of fresh dill
  • 1 teaspoon of fresh parsley
  • Salt and pepper for seasoning
  • 4 sliced of Rye or pumpernickel bread
  • 8 ounces of smoked salmon
  • 2 radishes thinly sliced

Recipe

  • Whisk the sour cream, horseradish (or horseradish cream), dill, parsley, lemon juice, salt, and pepper in a small bowl.
  • Spread the sour cream mixture evenly on all four slices of bread.
  • Top with the salmon, and some extra dill, pepper, and radish.

Banh Mi Sandwich

My Banh Mi

Ingredients

Pickled Vegetables

  • ½ cup of rice vinegar
  • ¼ cup of white sugar
  • ¼ cup of water
  • ¼ cup of carrots thinly cut into small matchstick-like shapes
  • ¼ cup of daikon thinly cut into small matchstick-like shapes
  • ¼ cup of cucumber thinly cut into small matchstick-like shape

Meat

  • 1 boneless chicken breast
  • ¼ cup of fish sauce
  • ¼ cup of lime juice
  • 2 teaspoons of garlic

Bread and serving

  • 1 French baguette (2 feet)
  • 1 tablespoon of fresh cilantro
  • 1 wedge of lime
  • (Optional) 4 tablespoons of mayonnaise
  • (Optional) Butter

Veggies

  • Mix the rice vinegar, white sugar, and water over medium heat. Stir for 1 minute or until the sugar has dissolved. After, remove from the heat and let it cool.
  • Pour the cooled vinegar over the carrots, daikon, and cucumbers.
  • Let the vegetables sit in the vinegar mixture for at least 1 day.

Chicken

  • Cook in the oven at 350 degrees for 15 minutes. After cooking the chicken for about 7 minutes, flip the chicken, and continue cooking until the center is no longer pink. Then, take the chicken out of the oven, let the chicken rest, and turn the oven off. Cut the chicken into strips.

Bread

  • Cut the bread in half long ways and put it in the toaster oven and toast lightly for 2-3 minutes. If you want, you can melt some butter and lightly coat both slices of bread.
  • Finally, spread some mayonnaise on the sandwich, put some of the marinated vegetables and the chicken on the bread and serve.

Medianoche Sandwich

Ingredients

Pork

  • ¾ pork tenderloin
  • 4 large garlic cloves
  • ¼ cup of olive oil
  • 2 tablespoons of orange juice
  • 1 tablespoons of lime juice
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin

Sandwich

  • 4 tablespoons/1/4 cup of butter
  • 1 tablespoon of yellow mustard
  • 4 sweet rolls (Search for pan suave)
  • 8 slices of deli ham
  • 8 slices of swiss cheese
  • 1 cup of pickles – (see recipe)
    • 1 cup of cucumbers slices
    • ½ cup of vinegar
    • ¼ cup of sugar
    • ¼ cup of water
    • ½ teaspoon of celery seed
    • ½ teaspoon of mustard
    • ½ teaspoon of dill
    • ½ teaspoon of salt
    • ½ teaspoon of pepper

Recipe

Pickles

  • Put the vinegar, water, and sugar, into a pot over medium heat. Mix until sugar has dissolved. After the sugar has dissolved, remove the vinegar solution from the heat and, let it cool. Once it is cool, add the celery seed, mustard, dill, salt, and pepper.
  • Put the cucumbers in a mason jar and pour the vinegar solution over it. Put the lid on the jar and put it in the fridge for 1 day.

Pork

  • Preheat the oven to 450 degrees Fahrenheit.
  • Poke the tenderloin with a knife many times all over it. Put some salt and pepper on it for seasoning.
  • Put the garlic and the olive oil in medium bowl, and microwave for 45 seconds. Then, add the orange and lime juice, oregano, and cumin.
  • Pour the garlic mixture on the pork. Be sure to rub some of the mixture into the parts of the meat that you poked with a knife.
  • Put the pork in the oven and roast it until it reaches 145 degrees Fahrenheit. This should take approximately 15 minutes. After it has been fully cooked, transfer to a cooling rack and cool completely. Then, thinly slice the pork.

Sandwich

  • Turn the panini press on.
  • Combine the mustard and half of the butter in a small bowl. Spread this mixture evenly in the insides of the rolls.
  • Put 2 slices of ham, 2 slices of cheese, 4 slices of pickles, on the bottom half of the bun. Then, put the top of the bun back on the sandwich.
  • Put the sandwich in a panini press. Cook it until it is golden brown.
  • If you don’t have a panini press, then you can use the stovetop. Get a pan put the sandwich in a pan. Then, get a plate and press down on the plate. Do this for 5-6 minutes on each side.
  • Serve.

A Few Extra Photos

The bread I used for the Medianoche sandwich

The bakery I first went to in search of bread for the Medianoche sandwich. I finally got the bread at a bakery called La Victoria.

Looking back, my favorite sandwiches were the banh mi and the BLAT. I enjoyed making the banh mi sandwich because although I have banh mi from a store before, I have never made anything like it. I also liked the classic BLT because it has just always been one of my favorite sandwiches. Although the Banh Mi and the BLAT were my favorites, I did enjoy the Smørrebrød and the Medianoche sandwich because I have never had either of them before (it was also very fun to find the ingredients for that one in the Mission). All of the sandwiches I made turned out really well and I hope that you try them too!
